Not sure if you're still looking, but I can second le Gabriel. Ate there in May and it was very satisfying and well done. Also le entrecôte for a great steak.

I like to have a couple cases worth in the basement, a 30-50 bottle fridge for short term aging and off site storage for stuff long term storage of stuff I need to forget about(or I'll drink it early :( )

Store brand denture cleaners all the way for the inside and a rinse with hot water for the outside is the best cleaning methods I've found

Seconding Dolcetto. Should be able to find Valtellina in that range as well. I like Priorat and that can be pretty inexpensive usually too

My parents offered us wine and beer pretty often growing up, but I always said no because I didn't want to drink (looking back, what a waste of opportunity to learn!). What exactly does 'tannin' taste like?

I agree with Joy L. Young Bordeaux blends and young barolo/nebbiolo have crazy tannins for me. I notice them when my mouth starts to pucker/dry out. It leaves me feeling like I've sucked on a warhead but without all the sour, you know?
