Re: DIY condo closet cellar build: pics + questions

I would give it a few days to settle in before getting too concerned. It may have gotten to 55 quickly, but that is just the air temp. The bottles are going to warm the air until they and their contents get down to your set temperature. The cooling unit is designed to cool slowly to avoid sucking th...

Here is the bottle probe:

I use one in my cellar and it keeps the temp very constant without a lot of cycling on and off.

Are you using a bottle sensor for temp control? That generally reduces cycling.

Can anyone provide commentary on Chandon's wines? Not bad, but not in the class of Schramsberg. I’m sorry for your loss. Losing your mother hurts no matter how old she was.

Sounds like you used wine to celebrate a life well lived. There is certainly nothing wrong with that and I would hope that someone will raise a glass for me when it is my time to go.

Building cellar: finishing the racking and 'what I would do differently'

I was surprised at cost of racking. A design for 1900 bottles was quoted at $10 k unfinished pine upto $16 k stained. Does that seem about right ? Does include 300 mag/ bubbly slots and all bins are pinot size That sounds high, but the finish is probably adding cost. I assume that includes installa...

I have zero room for new bottles and have been told to stop buying. A half case (3 Mataro, 3 PS) qualifies as not buying, right? Very little Mataro in my cellar, so I couldn't pass it up entirely. The responses to this one are interesting. Why is the cost of the wine not a factor in how how much to tip, but the cost of the food is? The idea that the effort to serve a bottle is no different whether the wine is $1K or $100 falls apart when we look at the food. The effort to serve a $100 steak i...

Walk-in refrigerators are made with 4” insulation panels. The last ne we had built for our restaurant was about $12K (including the refrigeration unit). An 8’ x 8’ walk-in with no refrigeration is about $4,500. A cellarpro cooling unit would add about $2K https://www.webstaurantstore.com/nor-lake-k...
