For us it’s 3 years for the OZV and 5-8 years for the SVD’s. As some have mentioned, go ahead and try some. Just give them at least an hour decant and save some to follow over 2-3 days.

I also recommend scheduling a tasting at Rotie with Maddie. Excellent wines and host. Saffron as mentioned above was excellent. Brasserie Four was a bust for us as the service left much to be desired.

We stayed at the Cameo Heights Mansion last year. It does not over look a vineyard and it’s about 25 mins from Walla Walla but it’s fantastic! I highly recommend you look it up. We will definitely be back.

We had this last month. Gave it an hour decant and drank over 3 hours. It did keep getting better. We ended up with an 89-90 rating. Some time in the cellar will help. Nonetheless it was enjoyable but there is more in the tank.

We go over this subject every 5 years or so. We have very good friends who paid a fortune to get a "formal" education in restaurant management. They opened an Italian themed restaurant with reasonable food prices and marked up their wine four times wholesale that was a key point in their schooling....

Just my data point...decanted tonight for about 4 hours. I’d say no rush at all on these, could easily go 5+ years with no trouble.
