Morels? We saute them in butter & serve over asparagus or meat. We've made soup. Also make cream based mushroom sauces over meat or noodles. Our favorite way is likely to simply lightly flour and pan fry the in oil + salt and pepper.

Not a fan of heavy or odd shaped bottles. Like so many others, I care what is in the bottle and not really about the bottle. The bottle needs to serve its purpose obviously.

I like Rhione varieties. Beaujolais works, too. We’ve played with more fruit forward reds like zin, too, and enjoyed it. I am partial to reds with beef/calf’s liver. With chicken livers we like bubbles or high acid white or Rose.

Depends on what kind of red wine he/she likes to drink. If they are more into the Burgundy (Pinot Noir) camp, I would recommend a Chenin from Loire, or GG Rieslings. If they drink more Bordeaux varietal (Cab/Merlot), go with Rhone whites, or even some new world Chardonnay. I like this ideal. Rose i...

I would imagine a fine, a warning, a meeting with the local alcohol board. Much like selling booze to a minor. And, if you do it enough, they take your license. There might also be a loop-hole/exception for very small operations and limits to how many people per visit or per day.

I generally let the staff handle pouring the wine. If it begins going sideways, I politely let them know what I would like and things generally go just fine. I have had to ask to see a manager, head somm, whomever, only once. Then again, I don’t byo that much as it is not legal in Indiana.

I have been a pretty long time buyer. I am on the fence. They buyout and then price increase, to me, are not positive signs. Loved the wines in the past, but as often said, there is a lot of good juice out there.

We’ve been to Everest many times. We quit going years ago due to service issues on a few occasions. Always loved the food, room and view. Maybe time to revisit.
