I finished a rather large pork shoulder 6 hrs sooner than I expected last weekend and used the oven to rest/hold the meat until serving time. Just wrapped it up in butcher paper and set 140 degrees/rear. This resulted in the best pulled pork I've tasted. No more worrying about timing with bbq!

We rolled into Acre on Saturday night a few years ago. Wally Joe was in the kitchen and he did a tasting menu for us. Truly one of the best meals we ever experienced.

The online recipes are wrong. The recipes on the app seem more correct. Look at the whole roasted chicken recipe and compare.

We have a #6 decanting. A quick taste revealed Rutherford dust. After going back through the emails this happens to be a Rutherford blend. Pretty pleased with this small experience.

I don't like using baking soda. To me, makes food taste funny/more salty. I prefer red creamer potato with duck fat roasted at 400 F for 40 minutes. Cut in half with skin side down.

I used to get cold smoked frenched pork racks from Dean and Deluca. They were amazing. If I recall they were Niman Ranch. Anyone know of any sources?

I highly recommend. Sure, you may find it cheaper, but they are supplying you with wines you are unfamiliar. We often get a wine that we love only to realize it no longer can be purchased. It would be impossible for me to curate wines of this caliber on my own.

I get sous vide for vegetables and fungi. But, for me, it creates a mushy texture in any type of flesh. Guess I'm not that cool.

Brine, bake, cool, dip in buttermilk, coat with seasoned flour, let sit 24 hr in fridge, bring to room temp, fry at 375 degrees, baste with spicy lard based glaze. Works well for dark meat. Never tried white.

Way too jammy for me. I got a lot of blue and purple fruit extract. Moderate pyrazines. I noticed some dust on day 2. Seems unbalanced. I would imagine this is 15%+ etoh. Not in my wheelhouse.
