I get sous vide for vegetables and fungi. But, for me, it creates a mushy texture in any type of flesh. Guess I'm not that cool.

Brine, bake, cool, dip in buttermilk, coat with seasoned flour, let sit 24 hr in fridge, bring to room temp, fry at 375 degrees, baste with spicy lard based glaze. Works well for dark meat. Never tried white.

Way too jammy for me. I got a lot of blue and purple fruit extract. Moderate pyrazines. I noticed some dust on day 2. Seems unbalanced. I would imagine this is 15%+ etoh. Not in my wheelhouse.

Brussel sprouts always for an easy and very good side. I find my wife asking for them often. Olive oil, shallots, garlic, black pepper, salt, and bacon! Took me a while to figure out the timing of each component while roasting, but it turns out great.

If you sous vide until the middle is at perfect temp any searing will result in overcooking. I could see sous vide for bay scallops then a scorched earth 5 second butter sear, but bigger scallops are going to be overcooked.
