Alan makes a valid point but as François stated slowox might be a misnomer as he wrote that he's moving away from the theory of slow oxidation towards allowing time for bad molecules to evaporate.

Made it past my cellar tonight. I feel my palate is getting jaded. Been drinking too much Champagne to cleanse my palate which increased overall consumption. It’s weird, I feel I reached peak enthusiasm for wine yesterday.
