Re: If you have offsite storage, how many bottles do you keep at home

Home inventory fluctuates between 150-200 bottles which we keep in three different coolers: A 180-bottle Dometic, mostly for reds and over size; a 56-bottle Vinotemp for whites and dessert wines, and a 26-bottle beverage cooler that I run at 47 degrees for ready-to-drink blancs and bubblies. Try putting some sodas and/or water in there for awhile and taste. Is it different from normal? Then it's the cooler. Probably a small freon leak, which would also effect the temperature swings. We BYO at least 90% of the time because there is such a plethora of low or no-corkage establishments here in SoCal. If anything, maybe a Champagne split off the list to get us started. I don't get the few sentiments here that mention being "fair" to a restaurant. The fact that we are eating there is...

I have purchased 453 different wines from The garagiste over the past 12 years... some 1200 bottles (thank you, CT) Most were wines I knew I wanted to buy, but I've also explored many unknowns that, perhaps, Rimmerman's hype nudged me into trying. I keep mine private for security reasons, even though the value of my cellar holdings is dwarfed by many here. I think I may allow friends and fans to view, but cannot recall. I mean, if a winery releases wine that is too young to enjoy, why not point it out on CT? If a user opens a wine that is too young to enjoy, why blame the winery? I'd sure like a better definition of savory is it being applied in this context.
