Re: Champagne refrigerator

Thanks for the input! Can't forget the "Special Club" size in the hard to fit list!!! Might remove some of the 750 triple deep Vintage View wall mounts in our wine wall and replace with mag/Champagne sized mounts. I'll still buy a wine frig to help with the storage issue, but for typical 750's. If I...

We are looking to buy a refrigerator specifically for Champagne sized bottles that can hold roughly 200-250 bottles. Does anyone have any brand/model recommendations?

Thank you!!

Re: Texture in champagne

Chris, interesting question and I don't know the answer. I recently did the Keto diet, which meant no alcohol. I didn't miss my beloved Burgundy or even sugar for that matter, but I craved Champagne, specifically the mouth feel, which was unexpected. I found this on the web: click.

Really like the Coessens Rosé. Took it to a blind tasting about four years ago and it was the WOTN. They are part of the Thomas Calder Grower Champagne list, which includes: Bérêche, Cedric Bouchard and Prevost. If I had to pick Champagnes based on broker then Calder would be the one. Not anymore! We recently opened the '07 d'Angerville "Champans" and it was one of the most bretty wines in recent memory. I did not even finish a single pour and it is typically one of my favorites in d'Angerville's portfolio.

We make Cioppinio a lot. This recipe from '98 "Bon Appetit " is our basis. Of the many different pairings tried so far, my favorite has been Inama's Soave Classico "Vigneti Foscarino". Depending on what you pay, you can use it in the recipe.
