Another suppliers of cork to DRC is Aquitaine Liege, and those are available through Thomas Savre here in the Willamette Valley, and California. Quite a few notable producers use these, they are gorgeous. I began using them as a trial alongside the steadfast 54mm DIAM 10

Jean-Marc speaks highly of 2004. I've noted he likes to end current release tastings with 2004's; he blinded us on 04 Meix Chavaux in 2018 and 04 Luchets in 2013. Both, I recall, felt youthful though with the same mature weight Don mentions.

Great topic. Makes sense to me. Burgundy has super parcellated holdings of a thin-skinned cultivar. Perhaps with each increase in the number of bottlings, settling/racking/bottling becomes more important and harder to execute perfectly/consistently. I think it is fair to say that Pithon-Paillé's wines are made intentionally with low SO2, native yeasts, etc. I wonder if it is just another natural white wine showing what happens when you choose to forgo protective measures like adequate sulfur?

The wines are fermented with indigenous wild yeasts from the respective vineyards and finished with a French yeast to assure dryness.
