Beetroot Quiche

250g flour
150g butter
cold water
800g beetroot
150g fresh goat cheese
120g walnuts, roughly chopped
1 organic lemon, peel and juice
3 eggs
200g heavy cream
28cm Quiche form
1. Combine flour and butter with a touch salt and a bit cold water by hand or machine. Put in the fridge with cling film for 2-4h
2. Wrapp beetroots in alu foil and put in the oven for 45min by 180C.  After 45min turn off the heat and let it rest in the oven for 15min
3. Combine eggs with cream and salt&pepper
4. Peel the beetroots. Grate the beetroots and add salt&pepper.
5. Add half of the walnuts to the grated beetroots.
6. Also add  lemon juice&peel
7. Remove the dough from the fridge around 15-30min before you use it.  Roll out the dough and put in a quiche form.  Use a fork and put some holes in the bottom of the dough.
8. Add the beetroots to the dough
9. Add rest of the walntus
10. Crumble goat cheese on top
11. Finally add egg cream. Put in the oven for around 40min by 180 C
