Bavarian Coleslaw

Ingredients

500-700g white cabbage/pointed cabbage

75g bacon, cubed


1 tbsp caraway seeds

120ml veggie/chicken broth

5-6 tbsp white vinegar

3-4 tbsp sunflower oil

1 tsp salt

1 little onion

 

Preparation

1. Slice the cabbage thinly with a mandoline. Add 1 tsp salt and combine. Let it rest for 30-60min. Then throw away the liquid at the bottom of the bowl.

 

2. Cook the bacon cubes on low heat until crisp.

 

3. Then add chopped onion and cook for 3-4min

 

4. Add vinegar and broth. Cook on high heat for 1min

 

5. Turn off the heat.  Add oil and caraway seeds&black pepper

 

6. Put this mix into the cabbage and combine. Let it rest with lid for 3h

 

7. After 3h make some adjustments, add perhaps more vinegar or oil or salt or pepper. I prefer a more vinegar taste, but it’s up to you.
