600g zucchini
200g feta cheese
2 spring onions
15 basil leaves
1/2 bunch dill
a few mint leaves
1/2 tsp ground cumin
1 little dry bird‘s eye chilli
2 eggs
60g flour
sunflower oil
1. Grate the zucchini in a sieve with kitchen towel. Add salt. Let it rest for 30min
2. Meanwhile add chopped spring onions to a bowl
3. Add chopped herbs to the spring onions
4. Add crumbled feta cheese to the bowl
5. After 30 min press the kitchen towl, so that all liquid from the zucchini comes out. It’s a lot of liquid. Then add the dry zucchini to the bowl.
6. Also add spices and salt&pepper
7.  In addition add eggs
8. Finally add flour
9.  Combine everything
10.  Form 4 thin fritters and fry them in a non-stick pan with 3 tbsp sunflower oil. Put the fritters on a kitchen paper and add more sunflower oil to the pan and add the last 4 fritters to the pan. ENJOY
