Mussels with Chorizo

1,5 kg mussels, cleaned

100g Chorizo picante, cubed

200ml dry white wine

200ml Noilly Prat/dry vermouth

200ml heavy cream (32%)

200ml tomato passata/strained

2 bay leaves

4-5 sprigs fresh thyme

1 shallot, chopped

3-5 cloves garlic, chopped

fresh parsley



1. Sauté the shallot, garlic  and chorizo in olive oil on medium heat for 5-8min in a casserole


2. Then add white wine and Noilly Prat.  Raise the heat to high.


3. Also add tomato passata and cream together with bay leaves and thyme


4. Reduce the liquid a little bit on high heat


5. Add mussels and add lid. Reduce the heat to medium heat and let it cook for 5-6min.


6. Give it a shake after 3min. After 5-6 min. the mussels are ready. Finally add chopped fresh flat parsley and combine.


7.  Have a spoon and a good baguette ready. The sauce is gorgeous.  ENJOY
