Cod in Parma ham

300g cod

200g Parma ham

250ml heavy cream (32%)

1 lemon


white wine



1.Cut the cod in pieces and drizzle with lemon juice. Pre-heat the oven to 200C/400F


2. Wrapp each piece of cod in one slice of Parma ham


3. Put them in an oven-proven form.  Add white wine, but not completely covered. Put in the oven for 15-20min


4. Meanwhile heat cream on very low heat.


5. After 15-20min add white wine from the form to the cream and add very high heat for 2-3min. Also add fresh basis leaves and a dash of lemon.


6. Serve the cod with the sauce and some Pappardelle.
