Penne with Gorgonzola dolce and spinach

Ingredients

250g Penne

200g fresh young Spinach leaves


200g Gorgonzola dolce/Stilton

1 shallot

1 clove garlic

dash white wine

250g heavy cream

pinch nutmeg

handful fresh walnuts

salt&pepper

Optional: parmesan

 

Preparation

1.Heat a little bit butter in olive oil and add chopped shallot&garlic. Let it cook for 4-5min.

 

2. Add a dash white wine and reduce for 2-3min

 

3. Add heavy cream and cook for 2-3min

 

4. Add Gorgonzola dolce and salt&pepper and a pinch nutmeg.  Cook for 5-10min on low heat.

 

5.  Meanwhile cook Pasta. And roast some walnuts in a pan on low heat.

 

6.  Add fresh spinach leaves to the cheese&cream sauce and let it cook with lid for 3-4min

 

7. Add cooked pasta to the sauce and combine for 3-4min. Sprinkle with walnuts and optional parmesan.
