1.5 kg potatoes waxy

100g Parmesan Grana Padano

200g Comté cheese

1/2 nutmeg grated

500ml heavy cream (32%)

20-30g butter




1.Peel the potatoes


2. Grate the cheese


3. Slice the potatoes 2mm with a mandoline


4. Add carefully one layer of potatoes to an oven-proven form


5. Then add generous salt&pepper and grated nutmeg. Finally add 50g grated Parmesan and 35g Comté cheese.


6.  Add another layer of potatoes slices in circle


7. Add generous salt&pepper, grated nutmeg.   And another 50g grated Parmesan cheese and 35g Comté cheese on top


8. Finally the last layer of potatoes in circle


9. Add salt&pepper.  Also add heavy cream and butter slices.  Put it in the pre-heated oven 220C for 60-75min.


10.  After 35min add rest of the grated Comté cheese around 130g for another 30-40min


11. Serve solo or with any kind of meat
