Basque Cheesecake

1kg Philadelphia cream cheese (room temperature)

350g sugar

5 eggs

1/4 tsp salt

500g Crème Double

30g flour



1.Pre-heat the oven to 200C/400F.  Butter a 25cm/10 inch springform and add baking paper


2. Put cream cheese and sugar to a bowl and combine with a paddle of a Kenwood/Kitchen aid etc.


3. Add eggs, but egg by egg


4. Then add Crème double, also salt and combine


5. Finally add carefully the flour


6. Add the mix into the springform and then into the oven for 1h.


6.  Let it cool down. BTW, it has to be dark on top.  ENJOY
