Pulpo Potato Salad

Ingredients

600g Pulpo, pre-cooked&vacuumed

600g fingerling potatoes

1 bunch parsley, chopped

1 lemon

1 lime

2 clove garlic, chopped

olive oil

 

Preparation

1.Cook the potatoes for 20min in water or steam it like me

 

2. Meanwhile wash the pulpo in water and cut in pieces

 

3.  Halve the cooked potatoes and put in a bowl.  Add also salt.

 

4. Sauté the pulpo for 5min on very high heat

 

5.  Put the pulpo to the potatoes

 

6. Then add chopped parsley&garlic

 

7. Also the juice of lemon&lime and a good dash of olive oil. Combine everything.

 

8. Let it rest for 5-10min. Serve with a good baguette or bread. ENJOY
