700g pork neck

1 onion, sliced

150g feta cheese, crumbled

olive oil

rub: salt, sweet paprika,rosmarin, thyme, oregano, sugar, cumin, coriander seed, garlic, onion, piment



1. Cut the pork neck in 2 pieces


2. Use some clingfilm and a sauteuse to flatten each piece


3. Put the meat in a form. Add olive oil and the rub. Put in the fridge overnight or several hours with clingfilm


4. Remove from the fridge and a bit onion slices and crumbled feta cheese on top. Pre-heat the oven to 200C


5. Roll the meat and use some meat twine.  Add some olive oil and put in the oven for 75-90min


6.  Remove from the oven


7. Serve with Tzatziki and Bulgur
