150g butter, cold and diced

300g flour “00”

2 eggs

1 egg yolk



300g Mozzarella, drained for 2-3h

250g cooked ham, cubed

75g Parmesan, grated

2 eggs




1 egg beaten for bruising


optional: nigella seeds on top



1.Combine flour, eggs, butter and salt in a machine or by hand and make a ball. Wrapp in clingfilm and put in the fridge for 1h


2. Meanwhile grate the parmesan, chopp the ham and whisk 2 eggs with salt&pepper and nutmeg


3. Pre-heat oven to 180C or 360F.  Roll out two-thirds of the dough.


4. Put in a tin/Quiche form. A bit larger than the form. Prick the base with a fork. Then roll out the rest of the dough.


5. Add crumbled mozzarella to the base


6. Then add chopped ham


7. Add parmesan grated and finally 2 whisked eggs with nutmeg and salt&pepper


8. On top put the rest of the dough and seal the edges with hand or a fork. Brush it with beaten egg.


9. Put in the oven for 40min


10. Serve with a fresh green salad.  ENJOY
