Pasta al Limone

350g Pasta (Pappardelle, Penne, Spaghetti etc.)

250g heavy cream

120g Parmesan grated

100g unsalted butter (iced and cubed)

1 organic lemon (peel and juice)




1.Heat heavy cream and add lemon peel and half of the juice


2. Meanwhile cook pasta


3. Then add iced butter cubes to the cream piece by piece and combine


4. Combine it carefully and add salt&pepper. Be careful with the salt, as the parmesan is salty too. Also add rest of the lemon juice


5. Combine cooked pasta with cream lemon sauce in a big sauteuse or Wok on low heat.


6.  Finally add grated parmesan and combine.  Not all parmesan once, but step by step.
