Pumpkin Soup

Ingredients
500g pumpkin
500ml coconut milk
1 onion
2 cloves of garlic
2 fresh red Thai-chilli (without seeds)
1tbsp chopped lemongrass
1tbsp chopped ginger
2tbsp peanut oil
2tbsp peanut oil
1tsp sesame oil
1/2 lemon
1tbsp fish sauce
1tsp sugar

Preparation

1. Chopp onion, garlic, chilli, lemongrass, ginger and pumpkin

2. Cook onion, garlic, chilli, lemongrass, ginger in peanut and sesame oil

3. Add pumpkin

4. Add half of the coconut milk and cook it for around 20min. with lid

5. Add rest of the coconut milk and cook for 10min. Also add fish sauce and sugar

6. Blend it in a mixer or use a puree bar. Finally add lemon juice and salt. ENJOY
