Damson Tarte
Ingredients
1kg damson
shortpastry: 200g flour, 100g butter, 3-4tbsp cold water, pinch salt
cinnamon crumble: 100g flour, 100 sugar, 80g butter, 1tsp cinnamon
Preparation
1. Combine flour, butter, 3-4 tbsp cold water and salt by hand or machine. Wrap in clingfilm and put in the fridge for 2-3h
2. Roll it out and put it in a quiche form. Then put for another 30-60min in the fridge
3. Put the quiche form out of the fridge and make some holes in the bottom of the pastry with a fork. Add the damsons on top and put in the oven for around 60min by 180C or 360F
4. Meanwhile combine flour and sugar.
5. Melt the butter softly with 1tsp cinnamon.
6. Add the melted cinnamon butter to the flour&sugar mix. Combine it.
7. Make crumbles with your fingers of both hands.
8. After 35-40min add the crumbles on top of the damsons. Put the quiche form back to the oven for the last 15-20min.
9. Serve it lukewarm with whipped vanilla cream or ice cream. ENJOY
