Medium-dark violet color. Rich, nutty, red fruits nose with hints of Iodine and Iron.
Lean, high toned, minerally, sour cherry fruit with a tart cherry pit aftertaste.
The brisk acid and firm stony profile was quite refreshing and begs for short term consumption.

I pop the wine.
Immediately pour out some wine into a half-bottle. Insert cork so there’s no air space. Save for next evening.
The rest I drink over 2-3 hours keeping it at cellar temp.
I write notes.
If on the 2nd night, the wine improves, I update my original note.

We’ve been practicing this technique for a while, too, since we can drink a couple of different wines in an evening, without overdoing the intake or letting leftover wine spoil. We can never completely eliminate the air under the cork, though, though David Bueker say’s it’s possible to do so using screwcap halves.
I’ve found very little development takes place between days one and two in the reserved half; it’s very nearly the same as the wine coming out of the original bottle.
If you also put it in the fridge, it will keep even better.
Of course, we do that, too.
