My favorite quick meal is an omelet with Canadian bacon, green onions,peppers, mushrooms and cheese. Serve with good bread. A baked potato in the microwave or beginning now corn on the cob. Fast and good!

A couple of nice seasoned filets on the grill, cherry tomatoes sprinkled lightly with sea salt and olive oil and popped in the oven to roast, and fresh greens/scallions from the garden. Fast and yummy!

The real 15 minute meal comes from the leftover chicken which can easily be heated into a saute of onions and mushrooms and poured over pasta, farro, arugula, etc. Add a little vinaigrette, some blueberries, shaved asparagas, parmesean and viola a great meal appears. Or open a can of black/refried beans, green chiles, cilantro and put on a corn tortilla with a little bit of jalapeno jack cheese. The trick is having these things available.
