and hot sauce.

convection oven at 475˚ on a pizza stone (cooked once oven hit temp, no extra time for the stone to really soak up the heat)
TJ crust out of the 'fridge as the oven was warming up. super quick start to finish, maybe 45 min total.

My personal favorite. Sage crusted veal chop, wild rice in mushroom broth and an exquisite bottle of 1992 Dehlinger Pinot Noir. Great football food.
