Grilled a couple of the Hudson Valley magrets last night and they were fantastic! They were huge yet still tender. I really wish they were more readily available out West. We purchased ours at Ottomanelli’s on Bleeker. They had both the Hudson Valley and D’Artagnan and the HV looked better to me.

I am going to take Suzanne’s advice and check out potentially ordering on line…Hopefully, they can ship and the cost is not too high.

Marshall we served the H.V. Magret as the duck course at that Liquid Farm dinner we had. I got them at Surfas.

John; Thanks. I know Surfas has them occasionally but they are not in consistent supply. I have tried the newest one in the OC as well and the supply is very variable. Sometimes, they have them frozen as well. In addition, Whole Foods sells the Mary’s brand…quite good but a bit small.

CURSES! I’m hooked on the confit. Oh my especially the jerkey that gets created frying in it’s own fat. My aching heart. Though it has stopped me from buying as much of the Hudson frozen foie.
