Bulk Sausage?

We call this patty sausage in the South and it’s at least as popular as links. The classic prep is to simply make small patties and pan fry them, served with eggs and grits. Also classic is Michael’s recommendation for biscuits and sausage gravy. Scotch eggs are not very common here, but one of my favorites.

I would correct this to “we call this sausage in the south.” If it’s in links, then it’s link sausage. In my family, the tradition for a big family breakfast would be biscuits, gravy, eggs, and grits. Having plenty of biscuits is essential, as you need some to eat with the sausage and eggs, some with the gravy, some with jelly (preferably Muscadine), and some with sorghum syrup to complete the meal.

I think I gained weight from reading that. I usually buy bulk sausage for chili (1/2 ground beef, 1/2 sausage). Most of the time I use chorizo, but spicy Italian works too.
