One winery in Paso

If you were going to visit only one winery in Paso - (Cannot be TH Estate Wines - (formaly Terry Hoage) or Tablas Creek Vineyard) what would it be and the wines you love about this winery.

Adelaida

Dover Canyon

wines are hit and miss, but the hits are really good, and I’ve found some of their wines age very nicely over the medium term (5-10 years, if not more). I’m not sure the wines remain consistent from year to year, but I’ve previously found great enjoyment from their Dusi Zin (one of very very few producers who get Benito Dusi’s fruit (as opposed to the Dante Dusi fruit)), “Bone Lore,” Jimmy’s vynd Syrah, Hansen vnyd Cabernet Sauvignon, and a couple other Syrahs that I don’t recall vynd sources for at this time. Wines are affordable, ta boot. Pretty grounds.

Tablas would have been my answer, had you not precluded them.

From the few I’ve visited, either Denner for a high end place or Adelaida for some more reasonably priced wines.

Calcareous–really good wines, superb place for a picnic.

Thanks everybody! Unfortunately we had to cancel our trip, otherwise I would have reported back here.
