I would suggest that you both stay (for a couple of days) and at eat Lauer.
Lars turned me on to Schloss Monaise outside of Trier. Beautiful setting, very good food and lots of back vintage wines. The Chef is a real wine geek.

About a year ago I enjoyed Becker’s Weinhaus (the more casual room, not the dining room) in Trier.
Brunnenhof was a more casual wine-bar with a pretty good atmosphere, right by the Porta Nigra, with a good wine list and decent food.
A little bit of a drive from Urzig, Wein und Tafelhaus in Trittenheim was good.
About 30 minutes outside of Trier is Waldhotel Sonnora, which was an amazing (formal, Michelin-starred) experience. Otherwise, we ate better in the Rheinhessen than we did it the Mosel Valley. Do go to Weinhaus Porn in Bernkastel, though. Great wine selection and snacks.
