Octopus experiment #2

Last night’s octopus experiment was making a spicy Italian-style octopus stew. The base sauce was a puttanesca-esque tomato sauce, adding red wine, chili flakes, and fresh herbs.
The octopus was quickly sauteed and then allowed to simmer in the sauce for 30+ minutes–the octopus texture was excellent. A fairly tasty experiment.

I don’t think I have ever seen Octopus done in this style. Sounds like it’s done in Italy though!

Sounds like it worked out very well! the slow simmer probably kept it tender.

Any plans for experiment #3?

Well, it wasn’t exactly a “traditional Italian” dish; I just improvised based on some other octo recipes I read through. But it turned out nicely.

Haven’t planning octo exp. #3 yet, but I’ve used up my octo for the moment.
