flash frozen sushi?

John Tesh,in his invaluable radio spot " intelligence for your life", just said that all sushi fish in America is flash frozen to kill parasites.
is this possibly true?

Not all. Much of it though.

The tuna auction in Tokyo is of frozen fish.

All, no. The majority, yes.

Anything caught in the middle of the ocean is processed right then and there. And anything that can harbor worms/parasites is also better off being flash frozen. That doesn’t cover the complete gamut, but pretty darn close.

So when someone says restaurant XYZ has the freshest sushi, it’s really “freshest after it’s been thawed from it’s normal flash frozen state”. It truly was fresh when it was caught several weeks prior to hitting your plate.

not only to kill parasites, but make it more available and shipping friendly. flash freezing is an amazing technology. and in the case of fish used for sushi, the’s also a textural advantage that you cannot achieve with truly fresh fish. some fish is also aged once thawed on site for added textural complexity.
