Pair this octopus dish

some suggestions please. (parsley salad easily ignored)

That calls for a Spanish red in my opinion. Maybe a Mencia or a grenache based wine from Mentrida.

I would go with a fuller-bodied rose, probably Spanish

You’re clearly ordering from Ballardo because that’s the only thing online that refers to something called “tomato fuso.”

I’d probably go with something like a very dry Albariño here. Even a NZ Sauv Blanc, with its awesome acidity, would probably work well.

Only because I’ve actually had it recently & it worked like a charm (although your Tomato Fuso was more of a Romanesco in my case - otherwise sounds the same).

I suggest a Plavac Mali from the Island of Hvar or from the Pelješac peninsula.
There is a saline element that pairs well with seafood.
I have had many a Plavac with grilled octopus and it worked well. (Usually, we wanted red and there was no other choice than Plavac.)

I will be candid in that I never had a dish with POTATOTOES. Are the toes of a potato like the eye of a potato?
