ISO Ranch Bean recipe

I’m in search of a good bean recipe. A side for. Group of 40, ranch style.
Anyone have anything they could recommend?

1 Pound Dried Pinto Beans
1 Negra Modelo
Ham Hock Stock as needed
2 TBS Rendered Bacon Fat
1 Cup Finely Chopped Yellow Sweet Onion
½ Cup Finely Chopped Green Bell Pepper
1 TBS Finely Minced Fresh Garlic
1 TBS Fresh Thyme
1 TBS Dried Mexican Oregano
1 Can Ro-Tel Tomatoes
Shredded Hock Meat
½ Pound Bacon Cooked
1 Bunch Fresh Cilantro Chopped
2 TBS Fresh Lime Juice

  1. Soak beans overnight
  2. Prepare ham hock stock by simmering hocks in water for 4 hours over low heat. Remove hocks when falling off bone and shred meat. Discard the skin and bone. Strain stock and place in refrigerator to separate fat.
  3. Fry bacon until crisp. Decant and strain rendered fat.
  4. In large stock pot, sauté onion and bell pepper in bacon fat until onion is translucent. Add garlic and sauté another minute or two.
  5. Add Beans, Beer, Ro-Tel Tomatoes, Thyme, Mexican Oregano, Hock Meat and Bacon to pot. Cover with Ham Hock Stock by at least two inches.
  6. Bring beans to a boil and then reduce to a simmer. Add additional stock as needed to keep beans covered at all times. Cook until beans are tender.
  7. Add Cilantro, Lime Juice and S&P to taste.
