I am experimenting with cold soups these days starting with cucumber soup yesterday and ajo blanco on sunday. This cucumber soup is very pure and simple, certainly works great with smoked fish as a starter. I had hummus and grissinis which was also nice. Of course the quality of the cucumber is important, I used 2 little organic “Feldgurke” which have a thicker skin and are little in size. Of course you can chill the soup for hours in the fridge.
