I know this famous recipe by Marcella Hazan is nothing new for you. Anyway, I cooked it for the first time. Wonderful simple&velvety.

Hmmm, simple yet interesting. I may try this. Vielen dank!

This has been a favorite of my family’s for a while. I’m working on tweaking it into a pizza sauce.

All that butter, that’s cheating!

Marcella Shazam never cheated.

What, no basil or oregano? But A for simplicity.

Richard,

that´s the trick, no herbs whatsoever. Only pur tomato flavor.

This reminds me of one of the best chicken dishes, also from Marcella Hazan. Just a simple good-quality chicken and 2 organic lemons. Nada mas…

Er, tomato , onion, and a few knobs of butter… (I suspect the latter is fairly key)
Will def try this though.

At the risk of thread drift, wine suggestions? With tomato based dishes I usually pay attention to the secondary flavours, here there is nowhere to go.

The onion is not chopped, just halved and later diiscarded from the sauce.

Chianti or in general italian red wine works great with tomato based dishes.
