as a kitchen wine a 2014 Katharina Wechsler “Westhofener” Riesling and later a 2005 Rioja Alta “904”. Both splendid!

Easy and tasty, Chef! We used Fontina and Gouda since cheese selections are dismal here. Will definitely make it again.
Tallegio is one of my favorite cheeses. So strong and rich!
BTW it’s great in ravioli as well!
