TOMATO RISOTTO

I borrowed this recipe from the famous swiss-italian food-blogger and cookbook author Claudio del Principe. Fair to say this dish is very PURE. So this Risotto is not everybody´s cup of tea. Anyway, I loved it!

I assume you use water instead of chicken broth to keep it vegetarian friendly?

No, because to have the pure tomato flavor.

Is “tomato passata” the same as tomato purée? Sort of looks like that in the photo.
