Pretty good marbling. The piece on the right looks more “wagyu like”, but I have no idea what cut of meat that is.
It was listed as Prime Short Ribs.
It’s about ~ 90% those cows live 200 yards from our home.
Have you trued it? Is the tariff reasonable?
We only get off cuts here in town. It’s wagyu for sure, but that is > twice what we see the off cuts going for.
The Brisket was $16.99, didn’t check the price on the strip. The rest was Prime.
Brisket way too pricey, but I would not hesitate on that ribeye.
More importantly, what would Richard Walker buy?
