ONION MARMELADE

For the first time I discovered the famous Tropea onions from south Italy in Berlin. They are famous for their sweet flavor. I used part of it for my Gazpacho and the rest for a Marmellata di cipolle di Tropea by the well-known Swiss food blogger Claudio del Principe and his book “ITALIEN vegetarisch” which means “ITALY vegatarian”.

Serve this onion marmalade for Foie Gras, wild birds, duck breast etc.
