So I want to try a new pairing tonight with a red burg. I usually lean towards some variation of salmon or duck - does anyone have a good dinner pairing that they’d be willing to share not involving either protein?
Any sort of game bird also makes a good match. I rather like this recipe: 10 Delicious Quail Dishes which I have served and enjoyed with with Vosne Romanee. The more delicate the Burgundy, the shorter marination time would be my general rule here.
With either this or a perfectly roasted chicken, I always find that a mushroom tart is a great accompaniment when Burgundy is involved.
I’m a big fan of both simple roast chicken and quail. I prefer a simple roast quail with good burg, S&P and maybe a little bit of something else but not much.
