I had some chorizo sausage leftover and remembered a Risotto recipe by Giorgio Locatelli. He used the italian pork sausage Luganiga. Fair to say my chorizo sausage was a bit too spicy and overpowered the fresh peas a little bit. Next time I will use Iberico sausage instead. On the other hand, it was a lovely dish, real soul-food. Not a *** dish, but this is what I love about italian food, it comes from the heart.
