Spring arrived in Germany and fresh peas are on its way. Time for pea soup, pea risotto or pea-mint ravioli. Of course you could also use frozen peas, but fresh peas are really something special. In addition use these refreshing raviolis as a partner for sea-food, fish, poultry.
Fair to say it is a lot of work to make fresh ravioli and maybe it does´t work at the first time. Don´t worry, the second or third time it will work. BTW, you could also add some semolina to the pasta dough, then reduce the flour amount.
