PEA MINT RAVIOLI

Spring arrived in Germany and fresh peas are on its way. Time for pea soup, pea risotto or pea-mint ravioli. Of course you could also use frozen peas, but fresh peas are really something special. In addition use these refreshing raviolis as a partner for sea-food, fish, poultry.

Fair to say it is a lot of work to make fresh ravioli and maybe it does´t work at the first time. Don´t worry, the second or third time it will work. BTW, you could also add some semolina to the pasta dough, then reduce the flour amount.

I have been doing spring peas as well. Simple recipe there and sure to be good. Spring peas are so delicious. So far have made

Spring peas wild salmon mustard beurre blanc
spring peas vegetable masala
gnocchi with morels and peas

Good looking recipe Martin. My wife makes a Crostini recipe with a topping made from peas, whipped cream, and mint. It’s really refreshing.
