How long does open Sake and Mirin last?

How long does Sake and Mirin last once opened? Does Mirin have to go in the fridge once opened?

After opening Sake can last for around a month, though most of the time three weeks is the max. You should always keep opened Sake in the refrigerator, or at least a wine cellar. The one caveat- unpasteurized sake, also called Nama, really has no extended aging potential. Once you open it you should probably drink it that day and maybe the next.

Cooking with it, should be awhile.

Any idea where I can get quality Mirin at or what brand is best? I’ve had the Kikkoman & Yaegaki. The Yaegaki isn’t bad, but the Kikkoman has too many additives.

Are any of these Mitsuwa markets close to you? They should have the best selection (plus a food court, mmmmm, tasty).
