CHESTNUT CHICKEN

A few days ago I came across a video with Daniel Humm/Eleven Madison Park. This chicken recipe reminded me on one of my favorite winter recipe since many years. And I learned a new technique which will help to put the butter under the skin of the chicken. BTW, in summer times you can add herbs&lemonpeel instead.
