Thank you Martin. Had this dish, or a version of it, tonight. The fish was fresh hake(cod like) and a local Italian meat company had nice prosciutto to wrap it in. One pound of hake translated to 6 pieces of fish that the prosciutto could easily wrap around. Fresh sage from the garden provided a nice touch as you show in the recipe link. With the acidity of the lime juice and saltiness of the prosciutto we found that a auxerrois from Luxembourg and a white Macon-Villages by Drouhin went well this dish.
