SALSA VERDE

Salsa Verde is a cold sauce and improves every fish, seafood, white meat and vegetable dish. It exist various versions, but also the simple version is lovely.

Ingredients
1 big bunch of flat parsley
2 tbsp capers in salt
1-2 cloves of garlic
1 lemon juice
olive oil

In addition you can add: 1-2 anchovy, pine nuts, green olives, hard-boiled egg or use other herbs like cilantro&mint. With cilantro I would use other nuts like macadamia etc.


Preparation
Rinse the capers in cold water. Mix all ingredients with a food-processor or by hand.

just looked it up, never knew that salsa verde came from european cuisine. So it’s ALMOST like a pesto?

What we get in California uses local ingredients with a Mexican touch. Tomatillos, etc.

More like an Italian version of chimichuri

YES, it´s like a pesto.

Just remember there are two key ingredients to a pesto, nuts and cheese.

As mentioned more like a chimichurri. Fundamentally, a heavily herbed vinaigrette.

We love to do this. Preferred with cilantro or a combo of parsley and cilantro. Usually add a serrano as well. It is great to always have this on hand.
