A lot of ice cream manufacturers use said stabilizers. My friend makes ice cream (opening his own shop) and said a heavy butterfat content ice cream combined with the gum stabilizers create a thick texture that is slow to melt. But he said using the stabilizers is like cheating among the artisan ice cream community

With enough time in heat, yes, it’ll start to melt. It’s simply sugar, water, flavor and gelatin. Basically a marshmallow.

My FIL will only eat Burger King. So every day he has to have a Jr. Whopper, Apple Pie and a Vanilla Shake. If he falls asleep while drinking the shake, it will still be solid 3 hours later.
