your hypothetical wine bar: pick 5 Burgs to serve by the glass

For argument’s sake, let’s say you’re opening a small wine bar and have decided to serve 5 different Burgs (red, white, or both) by the glass. The location, wines, and price per glass are entirely up to you, but keep in mind they have to remain cost-effective when one accounts for spoilage, customers sending back wine, etc. Thanks!

Most expensive would be an aged Ponsot from Chapelle-Chamberlin or Clos de la Roche depending on what I could source.

Assuming value for money and drinkability key criteria.

Hubert Lamy Bourgogne ‘Les Chataigners’ - great producer
Jadot Cote de Nuits ‘Le Vaucrain’ - pretty, fragrant, well priced
Domaine Dujac Morey-Saint-Denis - top rank village, year in, year out. Drinks well young.
Jean-Marc Vincent Santenay ‘les Gravieres’ 1er - seriously good from less heralded terroir

Crowds were pleased, prices were fair.

A fun challenge. I wonder if it makes sense to include sought-after wines like Tremblay or Mugneret Gibourg, even lower appellation wines, BTG, as those might be better-placed on the main list? Maybe by including Bachelet in my list below I’m contradicting myself…

More philosophical comments here, looking for what is out there and a good deal on a year to year basis, and of course trips to Burgundy to find best values each year!

Whites:
Definitely would try to find a good Bourgogne Blanc
St. Aubin/ Meursault
Puligny village

Reds:
-Again would go for a nice Bourgogne Rouge/Marsannay, Fixin, or Irancy in the $20-30 range, maybe two.
-Vote de Nuits village (likely NSG, Morey or Gev)
-Cote de Beaune village or 1er
