2011 Bougetz Cellars Cabernet Sauvignon Eminence - USA, California, Napa Valley (8/29/2014)
Tasted repeatedly from opening through 4 hours later. Initially quite closed, with firm tannins and some green pepper notes which hid darker fruit, this opened up beautifully and after 3 hours was incredibly good. Dense, chewy notes of cassis and black cherry mixed with smokey oak and black licorice. Meaty and savory tones worked well as a counterpoint. Excellent acidity kept the wine fresh and lively. The tannins are young and a touch rough but will smooth with time. This isn’t nearly ready to drink but was a wonderful wine nonetheless.
